This Gluten-Free Thing Is a Really Overblown Fad!
All in all I feel better when I reduce or eliminate wheat from my diet. Is that gluten? I don’t know. Maybe it’s all the extra stuff like sugar that tends to come along for the ride. But I know I feel better without it.
The science on gluten seems a bit muddled right now. What I bet (and will take wagers on) is that our knowledge of the mechanisms and health consequences of wheat and other modern grains are not well understood and we will figure it out later and have a face-palm moment. For better or worse for either side of the debate.
In other words I doubt we understand this very well in the whole-body sense. Remember when cholesterol was bad to eat? Or everyone took Vitamin C supplements?
